Do I need a two-color ribbon for an MJR8000? You used to, but it is no longer available.  

Only if your MJR8000 is set up to print red at certain times of day. As that feature was rarely used, the two color ribbon has been discontinued.
A one-color ribbon works fine.

How long will an unopened ribbon last?

If stored out of sunllght and +80f heat, they have a shelf life of about 5 years.
